Ingredients
Beets: 3-4 keep the juice
A zucchini (courgette)
A carrot
A Summer squash (optional)
Assorted spices: dill, salt recommended
Directions
Finely mince all of these ingredients, and combine them in a large saucepan.
Fry them for a minute or two, and then add in some water and the remaining beet-juice. Cover (tinfoil works fine) and bring this down to a simmer for 45-60 minutes, or until most of the water has drained away. Save some of the water though, as this will have soaked up the liquid let out from the vegetables.
Serve hot or cold. It is good on matzo.
