Quinoa Salad (KL'P)

Quinoa can be kosher for passover, but do check with your L.O.R.
Disclaimer: I do not measure when I cook so all amounts are flexible
Ingredients
Quinoa: 1 cup (250ml)
A Summer squash
A Zucchini/courgette
Directions
Fry up the vegetables until the insides are soft and mostly translucent.

Fry the quinoa with just a little oil, for just a minute or two in a pot. Then add in roughly 4 times the amount of water than you've got quinoa. Let this boil, stirring occasionally, for about 15 minutes, though the time will depend on how much quinoa you have, and the size of the pot, so I would just taste a few with a spoon to make sure they've softened enough to your liking.

Add all the ingredients together and salt and season to your liking.
