Eggs: 2
Potato (grated): 2 Yukon
Yellow Onions (grated): 1
Vegetable oil
Grate the potato and the onion, and strain it using a potato masher.
whisk the eggs and add the potato. Depending upon if you like them flakier or cakier, add more or less potato respectively.
Add the 1/2 cup to 3/4 cup of latke batter to the oil and press occasionally so that it all holds together.
If you would like to fill these with something such as pulled beef, make a thinner latke to begin with, then add the filling on top as it cooks. once that side is done, cover with more latke-batter and flip over.
